Ingredients
1 15oz can black beans, drained
1/2 teaspoon ground cumin
2 teaspoons olive oil, scant
1 Tablespoon lime juice
2 cups angel hair cabbage
2 scallions, white and light green parts, chopped
1/3 cup chopped fresh cilantro
4-6 white corn taco shells
1/3 cup crumbled feta
medium to hot salsa
any and all other “taco toppings”
Preparation
Place beans and cumin in small bowl; partially mash.
Prepare slaw: mix oil and lime juice, add cabbage, scallions, and cilantro and toss to coat. Season to taste with salt and pepper.
Fill shells with bean mixture, top with slaw and feta. Pass salsa and other toppings along side.
