Ingredients
153 grams 00 flour
153 grams all-purpose flour
8 (1 tsp) grams fine sea salt
2 grams active dry yeast
4 grams (1 tsp) extra-virgin olive oil
2 medium tomatoes
1 Tbsp olive oil
dash salt

Preparation
Combine flours and salt.
Mix together 200 grams (1 cup) luke-warm water, yeast and olive oil, then pour in to flour mixture. Mix together with hands and knead for 3 minutes, and let rest 15 minutes.
Knead rested dough for 3 more minutes. Place on heavily floured surface, cover with damp cloth. Let rise for 3-4 hours.
Preheat oven and pizza stone at highest temperature for 1 hour.
Stew the tomatoes with olive oil and salt for 15 minutes.
Place dough on floured surface and form in to pizza shape.
Place sauce on dough. Garnish with cheese, basil, etc.
