Ingredients
1 cup oat flour (90g)
2 eggs
1 cup buttermilk
1/2 tsp finely ground sea salt
butter to grease pan
xylitol or honey can be added to sweeten batter
filling:
11/2 cup plain greek yogurt
3 tbsp light brown maple sugar ( or sub with xylitol)
1/2 tsp maple extract
Preparation
mix filling together filling
whisk together crepe/ blitz batter. add butter to crepe pan and heat pan on medium heat.
1/4 cup batter spread or move pan so batter coats pan. cook for 20 seconds. edges are brown flip. put on plate spoon filling fold. topping of choice
