Ingredients
12T unsalted butter, softened
1 c granulated sugar
1c firmly packed brown sugar
2 eggs
2 tsp vanilla
2 c King Arthur flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 c quick oats
1 1/2 - 2 c chocolate chips
Preparation
Preheat oven to 350. With a stand mixer on medium to high speed, cream together softened butter and granulated sugar. Add brown sugar and beat until smooth. By hand in a small bowl, beat together eggs and vanilla, add to sugar and butter mixture and mix until incorporated. In a separate bowl, mix flour, baking soda, baking powder and salt. Add the dry mixture to wet mixture and blend together on low speed until incorporated. Add quick oats and mix in. Remove bowl from mixer and turn in chocolate chips. Spoon dough onto cookie sheet. Bake cookies for 12 minutes.
