Ingredients

1 orange

1/2 cup orange juice (no pulp is best)

1/4 cup balsamic vinegar

1/4 cup olive oil

salt and peper to taste

Preparation

Mix the orange juice, vinegar, olive oil, salt and pepper together in a bowl. Peel the orange and slice it into 1/8 or 1/4 inch cubes. Mix in the orange pieces.

Spoon over salad and enjoy.

Keeps well for about a week in the fridge.
