Ingredients
1/2 cup orange juice
3 tablespoons white wine vinegar
1/8 cup finely chopped shallots
1 tablespoons whipping cream
4 tablespoons (1/2 sticks) chilled unsalted butter, cut into tablespoon-size pieces
Preparation
boil first three ingredients until reduced to 2 tablespoons. Beat in cream. Before serving, add butter a bit at a time.
