Ingredients
4 Chicken Breasts
1 T. soy sauce
1 1/2 Cups fresh broccoli flowerets
4 ounces sliced fresh mushrooms
1 Cup finely chopped celery
4 green onions, chopped
2 carrots, slivered
1 tsp. finely chopped ginger root
1 Cup frozen green peas
1 T. water
1 T. cornstarch
1/2 cup chicken broth
Preparation
In a 1 1/2 quart shallow casserole combine chicken and soy sauce. Microwave on high for 3 to 4 minutes or until pink is gone. Add vegetables. Mix cornstarch with water and stir into the chicken broth. Combine with vegetable mixture. Cover and microwave on high for 8 to 10 minutes or until vegetables are tender-crisp. Stir several times during cooking. Serve with steamed rice. Makes 3 to 4 servings.
