Ingredients

1 can coconut milk

1-2 T curry paste, Mae Ploy, panang, yellow or green

3-4 T fish sauce

bamboo shoots

potatoes, cubed and cooked

carrots

can also add cooked chicken

Preparation

Saute onion and garlic in oil. Add 1 can coconut milk and curry, fish sauce and kaffir lime leaves then add potatoes and other veggies and cooked meat last. Garnish with chopped peanuts
