Ingredients

1 1/4 lbs Brussels Sprouts thinly sliced

2 Tbs Olive Oil

1 Tsp fresh thyme leaves

1 clove garlic; thinly sliced

1/8 tsp pepper

1 Tsp red wine vinegar

1/4 C coarsely grated Parmesan cheese

Preparation

Preheat oven to 450. In large jelly-roll pan, toss Brussels sprouts, olive oil, fresh thyme, garlic, salt and pepper. Spread evenly.

Roast: 20 minutes, stirring once

Toss: with red wine vinegar and cheese.
