1 1/4 c 1 % milk

100g grated parmesan, plus more for brulee

4 large yolks

oven to 300 bring milk and cream to simmer, add cheese and whisk to melt off heat, add yolks ladle into 8 1/2c ramekins bake in bain marie 30-40" cool to rm temp sprinkle with additional cheese and torch
