Ingredients

Preheat oven to 400

1/4 cup milk

1/4 cup water

1/4 cup unsalted butter (half a stick)

1/4 teas salt

1/2 cup flour

2 large eggs

1 cup freshly grated parmesan cheese

(Dried herbs if desired)

Preparation

In small, heavy saucepan combine milk, water,butter,and salt and bring to a boil overhigh heat. Reduce heat to moderate, add flour all at once and beat the mixture with a wooden spoon until it leaves the side of the pan and a ball. Transfer to a bowl and add eggs one at a time,whisking well after each addition.Stir in the cheese..

On buttered baking sheet drop batter in8 mounds and bake in the upper 1/3 of the oven for 20 min.
