Ingredients

3 1/2 ounces fresh angel hair pasta, uncooked

1/4 cup low-fat sour cream

2 Tablespoons dry white wine

1 Tablespoon plus 1 teaspoon grated Parmesan cheese

Dash of pepper

Vegetable cooking spray

2/3 cup sliced fresh mushrooms

1/4 cup chopped green onions

Preparation

  1. Cook pasta in boiling water 1 minute; drain well, and set aside.

  2. Combine sour cream and next 3 ingredients; stir well, set aside.

  3. Coat a medium skillet with cooking spray; place over medium-high heat until hot. Add mushrooms and green onions; saute 2 minutes or until vegetables are tender. Add pasta and sour cream mixture; cook, stirring constantly, until thoroughly heated. Serve warm.
