Ingredients
Pear Vinaigrette Dressing
1/2 medium ripe pear, peeled cored and chopped.
3 T pear, fig or champagne vinegar
1/4 tsp salt
3 T olive oil
Puree the pear in blender with vinegar and salt. Drizzle in the oil, blending until emulsified
Salad
10 cups spring mix
1/2 large fennel bulb
1 ripe pear
3-4 T crumbled blue cheese
3-4 tsp chopped walnuts or slivered almonds
Pear Vinaigrette
Preparation
Combilne all ingredients in a large bowl and toss. Servie right away.
