Ingredients
Crust:
½ c soft margarine or butter
1-1/3 c flour
¼ c sugar
Filling:
2 eggs
¾ c sugar
2 T flour
¼ t baking powder
3 T lemon juice (doesn’t have to be fresh)
Powdered sugar to sprinkle (approx ¼ cup)
Preparation
Crust - combine margarine/butter, flour & sugar and firmly pat into an ungreased 8" baking pan (pyrex). Bake at 350 for 15-20 min. Cool to about room temp.
Filling - Mix everything except the powdered sugar. Pour over crust & bake at 350 for 18-20 min or until set. Cool to about room temp & sprinkle with sifted powdered sugar.
