Ingredients

2 shallots, finely chopped

1 c white wine

1/4 c lemon juice

1 T cream

1/2 t salt

1/4 t pepper

12 T butter, but into small cubes

Preparation

saucepan, cook shallots, wine, & lemon.Boil until thick and syrupy. 10-15 min Reduce heat to very low. Add cream, salt & pepper. Whisk in butter a little at a time Remove from heat. Serve immediately or put in thermous.
