Ingredients
1/2 cup Oil
1 cup Sugar
3 Eggs
1/2 cup Cake Meal
1/4 cup Potato Starch
Pinch of Salt
Apples, small diced
Preparation
Combine sugar, oil and eggs. Beat well. Mix in dry ingredients, then diced apples. Pour into paper-lined muffin tins 3/4 full. Sprinkle with cinnamon-sugar mixture. Bake 40-50 minutes at 325. Yield: 12
