Ingredients

4 slices Sourdough or Country white bread

1/2 Cup of coarsely grated Parmesan

1/4 Cup of Pesto sauce

Salt and pepper to taste

optional: 2 eggs over easy

Preparation

Spread Pesto on either side of bread. Sprinkle 1/4C cheese and close. Grind coarse sea salt on outside of sandwich. Grill on medium heat or sandwich press. for 5 min total, or until the cheese is melted.

Remove from heat, slice into 1" wide sticks and dip into tomato soup.

Adding an over easy egg on top for a French Croque Madame variation of this sandwich.
