Ingredients

8 lbs Green Tomatoes (halved cherries, pears or quartered small ones are best)

1 Onion, quartered and sliced

4C Water

3C White Vinegar

1C Rice Wine Vinegar

4T Kosher Salt

2T Sugar

4T Pickling Spice

4 Cloves Garlic

Preparation

Layer tomatoes, onions, garlic and pickling spice in jars. Bring remaining ingredients to a boil and pour over. Cool for at least one hour. Refrigerate.
