Ingredients
1 8 oz can Almond Paste
1/2 Cup Sugar
1/2 Cup Powdered Sugar
pinch salt
2 egg whites
1/2 cup Pine Nuts
Preparation
Heat oven to 350 degrees. Line baking sheet with parchment and spray with non-stick spray.
In food processor, add almond paste (broken up), sugars and salt. Process until fully combined, about 1-2 minutes. Add egg whites and process until it comes together. If dough is too soft, refrigerate until firm enough to scoop.
Using disher or teaspoons scoop 1 inch balls of dough onto lined sheet pan. Top with pine nuts.
Bake 15-20 minutes until lightly browned on the edges. Transfer cookies on parchment to rack to cool completely. Peel cookies from parchment.
