Ingredients

1 1/4 cups pistachios, shelled

8 oz cream cheese

4 oz goat cheese

3/4 cup mixed dried berries, chopped

1/2 tsp salt

1 tsp fresh lemon juice

4 tsp finely chopped lemon zest

Preparation

Roughly chop pistachios, place in bowl. Cream together remaining ingredients. Refrigerate 1 hour. Scoop tablespoon sized balls of cheese mixture and roll in pistachios to coat. Refrigerate.
