Ingredients
1/3 C porcini powder
1/4 C coarse sea salt
1/4 C sugar
1 Tbsp black pepper
1 Tbsp crushed dried rosemary
1 1/2 tsp crushed red pepper flakes
1/4 C balsamic vinegar
Preparation
Combine all spice ingredients in mixing bowl. Pierce lamb with fork several times. Brush lamb all over with balsamic vinegar, then coat with rub. Let stand one hour before cooking. Preheat heavy-bottomed skillet over medium heat, add 1 Tbsp oil. Place lamb in pan, cook until rub has browned. Transfer to oven and finish at 400 degrees until desired doneness, about 15 minutes.
