Ingredients

1/2 cup kosher salt

1/2 cup sugar

2/3 cup boiling water

2.6 L ice cold water

1 tbs each whole peppercorns, fennel seeds, juniper berries

4 thick pork chops

Preparation

Dissolve salt & sugar in boiling water Add ice cold water & spices. Place chops in container and pour brine over to completely cover. Refrigerate for 12 hrs but no more than 24 hrs.
