Ingredients

Filling:

1 T Veg oil

4 garlic cloves finely minced

1 t sugar

1/2# ground pork

1 t fish sauce

salt & pepper

1 T toasted long grain rice

Dipping Suace

2 T fresh lime juice

2 T fish sauce

1 T sugar

2 thinly sliced Thai Chiles

1 T water

Serve:

1 thinly sliced Thai Chile

1/4 thinly sliced red onon

1/4 c each torn thai basil, genoa basil, mint

Boston lettuce leaves

Preparation

Filling: in a skillet, heat veg oil. add garlic; cook over moderately low heat, stirring a few times until golden brown (+/- 1 minute). Add sugar, cook for 20 seconds Add pork and cook over moderately high heat until no pink. Add fish sauce, season w salt & pepper

Toast Rice: med skillet over moderate heat, shake pan until browned +/- 3 min, cool, grind to a powder

Dipping Sauce: combine all ingredients, stir until sugar dissolves

Serve: off heat, add “Serve” ingredients to filling, sprinkle with ground rice

spoon filling into lettuce leaves, add desired dipping sauce and eat like a taco
