Ingredients

1 1/2 Cups grated potato

3 egg whites

3 egg yolks

1 1/2 tsp. salt

3 Tbsp. Flour

3 Tbsp. minced onion

1/8 tsp. pepper

Preparation

Beat egg whites with 3/4 tsp. salt until stiff. Beat egg yolk with 3/4 salt until lemon color. With wire whisk thoroughly but gently fold yolk into whites and sift in flour and pepper. Gently fold in grated potatoes and onion. Cook on griddle or frying pan in 1/4 in of oil.
