Ingredients

Potatoes - Yukon Gold

Scallions - chopped

Parsley - chopped

Salt

Freshly ground pepper

Vinegar

Olive Oil

Preparation

Boil potatoes with skin on. Cool slightly. While potatoes cool - mix scallions, parsley, salt and freshly ground pepper in bottom of large serving bowl. Mix equal parts of olive oil and vinegar. Add to scallion, parsley mixture. Peel and slice potatoes. Add to dressing mixture while potatoes are still warm.
