Ingredients

2 cups all-purpose flour

2 Tablespoons brown sugar

1/2 teaspoon salt

1/2 teaspoon pumpkin pie spice

1 1/2 cups milk

1 cup canned pumpkin

1 egg

2 Tablespoons cooking oil

Nonstick cooking spray

Preparation

  1. In medium bowl stir together flour, brown sugar, Baking powder, salt and pumpkin pie spice. Make a well in the center of mixture.

  2. In another medium bowl combine milk, pumpkin, egg and oil. Add milk mixture to flour mixture, stir just until moistened. (Batter should be lumpy.)

  3. Lightly coat nonstick griddle with cooking spray, heat to medium heat. Pour 1/4 cup batter onto griddle and cook about 2 minutes, turn pancake and repeat.
