Ingredients
Rolls:
3 eggs
2/3 cup pumpkin
1 cup sugar
1 teaspoon baking soda
½ teaspoon cinnamon
¾ cup flour
Filling:
2 tablespoons butter
8 ounces cream cheese (softened))
¾ teaspoon vanilla
1 cup confectioner’s sugar
Preparation
Rolls:
Mix roll ingredients well. Grease 10 x 15 cookie sheet. Cut wax paper to fit bottom of cookie sheet and grease wax paper. Pour onto cookie sheet. Sprinkle with ground walnuts. Bake for 15 minutes at 375 degrees.
Filling: Mix well till creamy. Spread on baked pumpkin, then put on towel and roll while hot. Let cool about an hour.
Keep refrigerated.
