Ingredients

2-3 lb. turkey breast

5 medium red potatoes, 1" dice

1lb baby carrots, halved

1 sweet onion, diced

1c pumpkin seeds, raw, shelled

½ c coconut oil

1 orange, sliced ¼ inch thick

Salt and pepper

Preparation

Preheat oven to 350.

Melt coconut oil in shallow saucepan over medium-low heat. Add pumpkin seeds and toast until oil is deep green and seeds are lightly browned, 10-15 minutes.

Place vegetables in 9x13 baking dish. Season with salt and pepper.

Liberally season turkey breast with salt and pepper. Place atop vegetables. Pour toasted pumpkin seed mixture over turkey breast (with oil! Will allow vegetables to crisp). Top turkey with 3-4 orange slices.

Bake uncovered for 40-50 minutes or until turkey’s internal temp is 170 degrees.
