Ingredients

2 sweet potatoes, peeled, sliced, boiled, and mashed

2 cups quinoa, cooked

1 T minced garlic

1/4 cup olive oil

2 eggs

1/2 cup Parmesan cheese

1-2 cups leftover vegetables or soup

Preparation

Mash together. Form into patties and cook in butter. Tastes delicious with coq a vin
