Ingredients

2-1/2 c. rinsed quinoa

5 c. chicken broth

2 c. corn

1-2 red peppers, chopped

1/2 c. chopped red onion or sliced green onion

2 c. spinach or swiss chard, chopped

1 c. cilantro, chopped

1 can black beans, rinsed

1-1/2 c. chopped or shredded chicken

DRESSING:

1 c. olive oil

1/4 c. Sherry or Rice vinegar

2 limes, juiced

3 teas. cumin

1-1/4 teas. salt

pepper

optional. . 1/2 teas. chili powder

Preparation

Cook Quinoa in broth for 10 min. then allow to sit for five minutes. Add other salad ingredients For Dressing combine all dressing ingredients Mix into salad
