Ingredients

1 1/2 Cups Dry Quinoa

3 Cups Water

1 Cup Frozen Edamame

1 Cup Shelled Roasted Pistachios

1 Cup Grape Tomatoes (halved)

1 Cup Chopped Fresh Basil

3/4 Cup Crumbled Feta Cheese

1/2 Cup Chopped Red Onion

1/2 Cup Extra Virgin Olive Oil

1/4 Cup Balsamic Fig Vinegar

Salt and Pepper to taste

Preparation

Add Quinoa and Water to rice cooker and start.

When completed add to a large mixing bowl.

Add remaining ingredients and mix well.

Chill and serve.
