Ingredients

1 Cooked Medium Red Skinned Sweet Potato (Yam)

3 Medium Eggs

1/2 cup Cooked Quinoa

1 cup Rice Flour

1 1/2 tsp Baking Powder

Coconut Oil

Preparation

  1. Mash sweet potato. Once mashed mix in 3 eggs.
  2. Mix in the cooked quinoa into potato mixture
  3. Mix dry ingredients together then mix into the potato mixture.
  4. In a skill on Low-Med melt coconut oil.
  5. Once oil is to temperature scoop ~1/3 cup of batter into skillet and brown both sides.
