Ingredients

2 cups cooked rice

1 1/3 cups milk

1/8 teaspoon salt

4-6 tablespoons sugar or1/2 cup brown sugar

1 tablespoon soft butter

1 teaspoon vanilla

2-4 eggs

1/2 teaspoon grated lemon zest

1 teaspoon lemon juice

(1/3 cup raisins or dates)

cake or cookie crumbs, crushed graham crackers, cinnamon & sugar

Preparation

Preheat oven to 325°

Combine first 6 ingredients, beat well Add lemon zest and juice Combine with rice lightly with a fork Butter a baking dish, cover bottom & side with crumbs Put rice in dish, cover top with more crumbs Bake pudding until well set - about 50 minutes Serve hot or cold with cream or fruit sauce
