Ingredients

1 (3 pd) beef roast

trimmed of excess fat

salt and pepper to taste

4 Tbsp olive oil

8 oz mushrooms of choice

2 small onion

1 Heavenly Horseradish dip mix from Gourmet creations

8 oz sour cream

8 oz real mayonnaise

fresh sub rolls

sliced Mozzarella cheese.

Preparation

  1. Mix sour cream and mayo with Heavenly Horseradish dip mix and let sit in fridge for a few hours. (You can also make this a day or 2 before and store int he fridge.)
  2. Preheat the oven to 375 F.
  3. Season beef with salt and pepper to taste.
  4. Heat 2 Tbsp of oil in a large cast iron skillet over medium-high heat until very hot. Add the meat and sear on both sides.
  5. Add the mushrooms & onions to a bowl and stir in 2 Tbsp of olive oil. Season with salt and pepper to taste.
  6. Add to the skillet around the roast.
  7. Put skillet in the oven and roast for about 40 minutes.
  8. Remove the roast from the oven to a cutting board and let rest for 10 minutes.
  9. Remove onions and mushrooms from skillet. 10. Slice the beef into thin slices and transfer to a platter.
  10. Adding the horseradish dip to the bread, add on the roast beef, mozzarella cheese, mushrooms and onions. Enjoy!
