Ingredients
1 1/2 pounds pork tenderloin
2 sprigs fresh rosemary
Preparation
Place rosemary sprigs between the two parts of the tenderloin.
Wrap tenderloin in aluminum foil and place in small baking pan. Roast in 350 degree oven for approximately 1 hour, or until internal temperature of meat is 165 degrees.
Using oven mitts, carefully remove foil, and allow meat to roast uncovered for an additional 10 minutes, or until browned. Remove from oven and allow to cool slightly.
Remove rosemary sprigs, slice, and serve.
