Ingredients

2 lb. small white and red onions

1/4 c. olive oil

salt and pepper

4 ox thick cut bacon cut into 1/4 " strips

1 15 ox jar fresh chestnuts

1/2 c. brandy

1 1/2 c. heavy cream

Preparation

Heat oven to 350. Toss onions w/oil, salt and pepper. Bake on baking sheet stirring twice until tender and brown 30-40 "

Heat bacon in skillet until crisp. Remove from pan and drain grease. Pull pan from heat, add brandy and ignite. cook until flame subsides. Add onions chestnuts, cream, salt and pepper. simmer until cream is reduced by half about 12-15 "
