Ingredients
6 medium potatoes
3 T. melted butter
sprinkle of salt
2 or 3 T. breadcrumbs
Parmesan cheese (optional)
Preparation
Preheat the oven to 425 degrees. Peel potatoes and place in cold water.
Slice each potato in thin slices at 1/2-inch intervals, leaving 1/2 inch on each end. Do not cut all the way through. Place each potato on a large wooden spoon before slicing to prevent the knife from cutting completely through. Return each potato to cold water after slicing. Drain all potatoes and dry with paper towel.
Place potatoes in buttered baking dish, sliced side up. Baste with melted butter and sprinkle with salt.
Bake 30 minutes. Sprinkle with breadcrumbs and Parmesan cheese. Bake another 15 minutes or until potatoes are done.
