Ingredients
4 large (about 3 pounds) sweet potatoes, peeled, halved lengthwise, and cut into ¾-inch wedges
3 tablespoons olive oil
Salt and pepper, to taste

- Set the oven at 450 degrees. Have on hand 2 rimmed baking sheets.

- Roast for 20 to 25 minutes or until the undersides are partly golden. Turn and cook for 10 to 15 minutes more or until golden and tender. Reserve 8 wedges for the quesadillas. Lisa Zwirn
