Ingredients
2 sweet potatoes, about 2#
3 tbsp olive oil
4 tbsp roasted chop coarsely pecans
4 green onions, chopp coarsely
4 tbsp parsley, chop coarsely
2 tbsp cilantro chop coarsely
1/4 tsp red pepper flakes
4 tbsp golden raisins
salt and pepper
dressing
4 tbsp olive oil
2 tbsp maple syrup
1 tbsp sherry vinegar
1 tbsp lemon juice
2 tbsp orange juice
2 tsp grated fresh ginger
1/2 tsp cinnamon
salt and pepper
Preparation
Preheat oven to 375. Cut potatoes in 3/4 inch cubes, do not peel. Drizzle with oil, salt and pepper,and bake 30 minutes. Mix all for dressing. When potatoes ready, mix with other ings, then pour dressing, toss. Serve hot or at room temp
