Ingredients

1 Large zucchini, cut lengthwise in 1/2 inch strips

1 large yellow squash, cut lengthwise in 1/2 inch strips

2 large tomatoes, cored and halved

olive oil

salt and pepper

1 jalapeno

2 cloves garlic minced

1 large shallot minced

1/4 tsp hot Mexican Chili powder

2 ears corn (1 1/2 cups)

1/2 cup light cream

3/4 cup shredded cheddar

Preparation

Grill the first 3 ingredients. Saute the garlic, shallots and jalapeno. Add chili and corn cook until caramelized. Add grilled vegetables cook until liquid evaporates, add remaining ingredients. season with salt and pepper
