Ingredients

3 zucchini, scrubbed, halved lengthwise, and cut into 1/4-inch slices

1 tablespoon olive oil

1 scallion, chopped fine

2 tablespoons plain yoghurt

Cayenne to taste

Preparation

In a shallow baking pan toss the zucchini with olive oil and salt to taste; roast in the upper third of a preheated 500 degree oven for 20 minutes, or until golden brown. Toss in a bowl with scallion, yoghurt, and cayenne.
