Ingredients

Shrimp

1 lb raw shrimp, deveined and peeled

Juice of 1 lime

1 tsp sesame oil

fresh ground salt & pepper to taste

Cocktail Sauce

1/2 cup mayonnaise

1 tsp sambal, siracha, or chili paste with garlic

2-3 TBSP Thai sweet chili sauce

1-2 tsp oyster sauce

Juice of 1/2 lime

Preparation

Shrimp Marinate shrimp in lime juice, sesame oil, and salt & pepper for about 1 hour. Grill or broil shrimp until barely done (a few minutes on each side.) Remove to a platter and allow to cool at room temperature (the shrimp will finish cooking as they cool.) Drizzle with additional lime juice, to taste, as shrimp are cooling.

Cocktail Sauce Combine all ingredients, adjusting all ingredients to taste.

To Serve: Put cocktail sauce in a small dish in the center of a plate. Surround with grilled shrimp. Garnish with lime wedges.
