Ingredients
2-2 1/2 lbs salmon
lemon juice 4 tbls
olive oil 2 tbls
1 onion finely chopped
minced ginger–tbls
2 c chopped fresh tomatoes
green beans
1 can unsweetened coconut milk
seasonings–basil, cilantro, salt, pepper
Preparation
Skin off salmon–cut into 2" pieces. Marinate in lemon juice and olive oil–1 hr + Preheat oven to 350 saute onion, add garlic, ginger, tomatoes–get saucy–then add coconut milk and green beans–season salmon in single layer–bake 10 min pour sauce over salmon–cover, bake 15 min–garnish with cilantro
