Ingredients

1 C. chopped onion

1 C. chopped celery

1 C. chopped sweet pepper (green, yellow, or red)

1/2 t. cayenne pepper

1 t. salt

1 lb cooked Andouille sausage

2 C.peeled/seeded/diced tomatoes

1 T. crushed garlic

1 lb raw shrimp

4 bay leaves

2 C. rice

5 C. chicken broth

Preparation

Saute onion, celery, and sweet peppers with cayenne pepper and salt. Add sausage and bay leaves and cook 2 - 3 minutes. Add tomatoes and garlic and cook 2 - 3 minutes more. Add rice and chicken broth and simmer for 25 minutes. Add shrimp 10 minutes before rice is due to finish.
