Ingredients

2 T grapeseed oil

4 garlic cloves (coarsely chopped)

2 1/2 cups cooked sweet potato (skins removed)

1 1/12 cups grated raw zucchini

1 cup grated sharp cheddar cheese

2 scallions (diced)

1 clove garlic (pressed)

2 large eggs

1 cup fine breadcrumbs

2 dashes nutmeg

1/2 tsp smoked paprika

1 tsp truffle sea salt (or to taste)

Preparation

Begin heating grapeseed oil in a large skillet on med heat. Make sure the oil covers the whole bottom of the pan.

Meanwhile, place the rest of the ingredients in a large mixing bowl and stir until evenly combined.

Add the chopped garlic to the oil in the pan, stirring until browned (about 3 minutes)

Form the sweet potato mixture in to 3 inch diameter patties and fry them in the oil for about 4 minutes each side. The side is done when the patties are stiff enough to flip with a spatula and golden brown. Transfer finished patties to a paper towel lined plate.

Serve warm
