Ingredients
2 eggs, beaten
1 cup milk
1/4 cup oil
salt to taste (depends on seasonings)
1 cup white all purpose flour
1/2 cup whole wheat flour
1/2 cup oats
2 tsp baking powder
Seasoning suggestions (can add other things instead of these, as desired, depending on the flavour you are going for)
1 tsp smoked paprika
1 tsp mustard powder
2 tsp Herb & Garlic seasoning (I used Epicure)
diced bacon, cooked
grated cheese (I used smoked cheddar) approx 1 cup. Reserve some to top muffins.
1/4 cup sunflower seeds (or pumpkin)
2 green onions, sliced
Preparation
Mix wet ingredients, and salt. In a separate bowl combine flour and baking powder and any spices/herbs being used.
Add wet to dry. Stir in seasoning ingredients such as cheese, bacon, onions, seeds.
Scoop into lined muffin tins. Top with reserved grated cheese.
Bake at 350F for 25-30 minutes.
