Ingredients
2 large ripe bananas
1&1/2 cups flour
3/4 cups sugar
4 Tbsp unsweetened applesauce
2 large egg whites
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp baking powder
3/4 cups chocolate chips (I like to use mini chips)
Preparation
Pre heat oven to 350 degrees. In a large mixing bowl mash the bananas thoroughly and combine the remaining wet ingredients (including sugar). Mix in the dry ingredients until just combined. Fold in the chocolate chips. Spray muffin tins with cooking spray. Fill tin about 2/3 full with batter. Bake in oven for 18-22 minutes or until toothpick inserted in center comes out clean. Each mini muffin is approx. 65 cal.
