Ingredients
2 lb sweet potatoes, peeled and cut into 1 inch pieces
1/2 t coarse sea salt, plus more
2 T veg, canola or olive oil
1/4 t ground black pepper
1/4 C maple syrup1/4 C pecan pieces
Preparation
Preheat oven to 425, coat 9 x 13 baking pan with cooking spray Mix all together except for pecans arrange mix in baking pan Bake 25-30 min, stirring half way Remove and sprinkle with pecan pieces Finish with pinch of sea salt
