Ingredients

Materials

1 cup of olive oil

2 cups of fine semolina

Syrup materials

3 cups of white grain sugar

5 cups of water

1 cinnamon stick

a small orange (cut one slice and take the rest’s juice)

Preparation

For this dessert you are going to need two pans, one for the syrup and one for the semolina. Let’s begin…

Put the olive oil in one pan and add the fine semolina. In a medium temperature you have to stir continuously to avoid getting the semolina burned. It’s ready as soon as it looses its yellowish color and take a golden - brown color.

Put the water in the second pan and add the sugar, the cinnamon stick, the orange juice and an orange slice. Stir until you have a smooth syrup. As soon as it boils you leave it for some seconds and its done!

You remove the orange slice and the cinnamon stick and add the syrup to the semolina. Be extra careful to avoid being burned. The oil inside the semolina doesn’t react in a friendly way with the syrup’s water!

Put the mixture in a baking pan or a pyrex and add cinnamon powder. Let it cool for about an hour and it’s ready to be served! Tips

  • You may want to add an aniseed in the syrup for more flavour Don’t forget to remove it before you add the syrup to the semolina.
  • You also may add raisins and almonds or nuts in the mixture! Whatever your heart desire!
