Ingredients
1 pound cooked, peeled and deveined shrimp, cut into quarters
1/8 teaspoon cayenne
1/4 cup mayonnaise
Salt and pepper to taste
1 tablespoon lemon juice
4 Boston (or Bibb) lettuce leaves, washed and dried
1/4 cup scallion greens, sliced
4 brioche buns
Potato Chips
Preparation
1 - Combine the mayonnaise, scallions, lemon juice and cayenne in a bowl. Season with salt and pepper to taste.
2 - Toss the shrimp in the mayonnaise mixture.
3 - Line the buns with lettuce and spoon in shrimp.
4 - Serve with potato chips.
